Evolve Spirit Bar is a Very trendy cocktail lounge at the Very trendy MacQ01 Hotel. Its interior is very comfortable, modern and a fantastic sophisticated place to have a classy beverage. It has a seasonal cocktail menu alongside all the usual favorites and n extensive spirits list from all over the world.

Unbelievably stunning fossile collection!!! Superior aesthetics with amazing drinks - we definitely had one amazing night in here. Had the whisky tasting flights and it was fabulous. Queen bee the cocktail was okay (a bit too sweet). Also nice table service and it’s not too busy or noisy - really suitable for a few drinks and conversation to just wind down for the night. One of the most worth visiting bar in Hobart.

This is a world class cocktail bar with outstanding views, quality bar eats and impeccable service. The spirits selection is outstanding and the staff are educated and engaged. Suggestions for matched food and drink experiences were spot on showing the genuine interest of the hospitality professionals in their craft.

Wow this is a great bar.the choice of drinks particularly spirits is fantastic.best margarita I’ve had !!every member of staff is really warm knowledgeable &welcoming and it’s so cool on the waterfront with dinosaurs!!.please visit you won’t be disappointed

This cosy spirit and whisky bar, located on the Franklin Wharf, Hobart Tasmania is a hidden gem. It overlooks the water and the bar is stocked with some of the finest local and international spirits. I’ve been to some pretty cool bars, but this is one one my best.

If you get the bowl of olives make sure you have a few people. Serving size was very generous. Drinks nice. Atmosphere was lovely.

This luxe and stylish bar presents an odd and curious display of fossils, animal skeletons and other zoological artefacts. This is honestly the most stylish bar in Hobart. Choose to nurse your cocktails or do a tasting flight overlooking the Tasman sea, or in the cool plush lounge with palaeontogical finds beautifully presented in the ingenious table displays. It’s a great experience here if you do get past the bible of spirits. #eatstylishtravelstylish

As a person who loves fossils! This place is absolutely amazing! It's hands down the best bar ever! I don't drink alcohol but the selection of mocktails were good and there is always the option to customise to your taste which was appreciated! Do your self a favour and pop by you won't be disappointed... Unless you don't like the coolest things that ever existed 😅 (price was for 2 mocktails $26
